Vineyard Management
Meticulous vineyard work is the foundation of quality. We collaborate with growers who share this commitment, bringing both passion and precision to their work in the vines. Chardonnay can deliver exceptional results even at slightly higher yields, which aligns naturally with our goal of offering outstanding quality at fair prices.
Pinot Noir, by contrast, demands greater sensitivity and care. To meet these challenges, we work with vineyards that maintain a thoughtful balance of vine ages, combining established vines with carefully replanted younger ones. This approach helps preserve vineyard vitality while increasing resilience to the growing pressures of climate change.
Winemaking Philosophy
For Erni and Manoël, great Burgundy wines are characterized by a perfect balance of minerality, elegance, and finesse. They have unwavering respect for terroir, the foundation of their winemaking philosophy. Their goal is to create wines that reflect their origin to the fullest extent, generating that unique magic for which Burgundy is world-renowned.
Traditional techniques are central to their work: spontaneous fermentation with natural yeasts, restrained extraction, and extended lees aging in barrels with minimal new oak. This ensures that the authentic aromas of the terroir reach the bottle unaltered. This gentle approach is designed to preserve the natural acidity, minerality, and fruit intensity – the essential elements for freshness, balance, and expression of the terroir.
Winemaking Techniques
Sorting
We sort rigorously – either during the harvest directly in the vineyard, or afterwards on the sorting table. In Burgundy’s continental climate, humidity and limited airflow can increase the risk of disease in the vineyard. Careful sorting allows us to remove any affected fruit, retaining only clean, healthy clusters and protecting the purity and balance of the final wine.
Racking
By limiting racking and keeping the wine on its fine lees, freshness is preserved, and the wine is naturally protected during élevage, helping it age gracefully while retaining clarity and balance.
Filtration
To preserve the texture and structure, we use a gentle crossflow filtration process that maintains the character of the wine.
Cuvée Selections
Only cuvées that meet Perron de Mypont’s exacting standards are selected for bottling. Lots that fall outside this vision are intentionally redirected elsewhere, preserving the focus and quality of the final wines.
