Manoël Bouchet’s career in the wine world began 25 years ago. At that time, he traveled extensively representing a renowned Burgundian cooperage. On these journeys, he met winemakers from around the globe, tasted countless wines, and immersed himself in topics such as the influence of lees contact and aging in wood. Together with the University of Dijon, he developed new methods for barrel making and aging management – techniques still used today by two leading cooperages he advised for many years.
Manoël’s career path testifies to his diverse interests: He worked for a famous Burgundian wine producer for more than twelve years, oversaw a traditional Japanese sake project for seven years, and ran a wine consulting firm for more than two decades – to name just a few of his numerous projects.
Manoël has excellent connections in Burgundy: He has been active in several Burgundian associations and organizations, including the Bureau Interprofessionnel des Vins de Bourgogne (BVIB), where he served as co-chairman of the department for strategy and future prospects, the Fédération des Négociants Éleveurs de Bourgogne (FNEB), and as chairman of the Jules Guyot Institute at the Dijon Wine University.
